Ingredients

  • 1 avocado, pitted and peeled
  • 1/3 cup Daisy Cottage Cheese
  • 4 pieces whole-wheat bread
  • 2 hard-cooked eggs
  • 1 small tomato
  • 2 tablespoons diced yellow bell pepper
  • 2 tablespoons diced purple onion
  • 1 tablespoon chopped fresh basil

Directions

Combine the avocado and cottage cheese in a shallow bowl. Mash the mixture until blended and almost smooth. Meanwhile, toast the bread. Coarsely chop the peeled eggs and tomato. Spread the avocado mixture over the warm toast, top with the eggs, tomato, bell pepper, and onion. Sprinkle the top with basil.
