2 Daisy Single Serve Cottage Cheese with Blueberries, divided
2 large eggs, separated
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 tablespoon sugar
6 tablespoons water
1 cup oat flour
1/2 teaspoon baking powder

Oats may be blended in a food processor to make oat flour. Pulse until oats resemble flour.
Directions
Heat waffle iron on medium setting.
2. Add 2/3 cup cottage cheese, egg yolks, vanilla, almond extract, sugar, water, oat flour, and baking powder to a blender. Blend until batter is smooth. Pour into bowl. Stir in blueberry topping from one lid.
Separately, beat egg whites to soft peaks. Gently fold into batter until evenly combined with no streaks remain.
Coat waffle iron with non-stick spray. Pour a little less than ½ cup batter into iron and cook until golden brown.
5. Top waffles with remaining cottage cheese and blueberry topping from 2nd lid. Serve immediately.
