Ingredients

  • 1 cup canned black beans, drained, and rinsed
  • 1 large garlic clove
  • 1/4 cup loosely packed fresh cilantro leaves
  • 1/2 cup salsa, drained
  • 1/2 cup Daisy Cottage Cheese, drained
  • 1/4 cup finely shredded Mexican cheese blend

Ingredients

  • 1 cup canned black beans, drained, and rinsed
  • 1 large garlic clove
  • 1/4 cup loosely packed fresh cilantro leaves
  • 1/2 cup salsa, drained
  • 1/2 cup Daisy Cottage Cheese, drained
  • 1/4 cup finely shredded Mexican cheese blend

Directions

  1. Heat the oven to 350 degrees.
  2. Place the beans, garlic, cilantro, and salsa in a food processor bowl; pulse 3 times to coarsely chop. Alternatively, mash the beans and chop the cilantro by hand and then mix in the salsa.
  3. Add the drained cottage cheese and stir. Spread the mixture into a 2-cup oven-proof ramekin and top with shredded cheese.
  4. Bake for 20 minutes or until heated through and the cheese is melted.
  5. Sprinkle with an additional 1 teaspoon chopped cilantro, if desired. Serve with tortilla or pita chips.
