Whisk the eggs in a large bowl until frothy; whisk in the half-and-half, 2 tablespoons honey, apple pie spice and vanilla extract.
Dip the bread into the egg mixture, soaking bread thoroughly. Place on large plate.
Heat a large griddle or nonstick skillet over medium heat until hot. Brush with the melted butter; cook the bread for 3 to 5 minutes or until golden brown, turning once.
To serve, place one slice of French toast on a plate. Top with the cottage cheese, berries and a second slice of French toast. Sprinkle each serving with powdered sugar. Drizzle with honey or syrup if desired.
