Directions

  1. Pre-heat the oven to 375 degrees.
  2. Combine the flours, baking soda, baking powder, cinnamon, and salt in a medium bowl.
  3. Whisk the egg in a small bowl.
  4. In a medium bowl whisk the mashed bananas, maple syrup, vanilla extract, cottage cheese, oil, milk and whisked egg. Add the wet ingredient mixture to the flour mixture and stir well to combine and get rid of lumps. Fold in the chocolate chips and walnuts.
  5. Portion the mixture into 18 lined muffin tins sprayed with nonstick spray.
  6. Bake the muffins for 20-25 minutes or until cooked through. Store the muffins in a sealed container.
