3 large very ripe bananas, peeled and cut in chunks
1 teaspoon vanilla
Directions
Heat the oven to 350 degrees. Spray a 9x5-inch loaf pan generously with non-stick cooking spray.
In a large bowl, mix the flour, baking powder, baking soda and salt with wire whisk until well blended.
In a blender container, combine the cottage cheese, butter, eggs and sugar. Cover; blend on high speed 1 minute to 1 minute 30 seconds or until smooth and creamy. Stop the machine. Add the bananas and vanilla. Cover; blend 30 to 45 seconds or until smooth.
Pour the banana mixture into the dry ingredients. With a rubber scraper, fold the ingredients together just until the dry ingredients are all moistened. Spread in the pan.
Bake for 50 to 55 minutes or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, cover loosely with small piece of foil for the last 10 minutes of baking.
Cool in the pan for 10 minutes. Run a knife around the edge of the pan to loosen the loaf. Turn onto cooling rack. Cool completely (about 1 hour) before slicing and serving.
