Beat the eggs, sour cream and 1 tablespoon cottage cheese in a large bowl at medium speed for 3 minutes or until light and fluffy. Cover and refrigerate. Meanwhile melt 1 1/2 tablespoons butter in a small sauté pan over medium heat. Add the apple and sauté for 6 to 8 minutes or until the apple is tender. Add the brown sugar, cinnamon and nutmeg. Cook for 1 to 2 minutes or until the sugar is melted and syrupy. Heat a small sauté pan over medium heat until hot. Add 1 tablespoon butter; heat until hot but not sizzling. Add 1 cup of the egg mixture and cook for 15 seconds without stirring. Using small spatula, gently pull the cooked egg towards the center, allowing the uncooked egg to flow onto the pan. Continue cooking and stirring to desired doneness. Spoon 1/3 cup drained cottage cheese into center of the omelette; top with 1/3 cup warm apple filling and 2 slices crumbled bacon. Fold the omelette and slide onto a serving plate; brush with 1 teaspoon softened butter. Garnish as desired. Repeat with second omelette.
