Ingredients

  • 1 tablespoon sugar
  • 1/2 teaspoon pumpkin pie spice, divided
  • 2 pears, halved and seeded
  • 2 tablespoons apple juice
  • 1/2 cup old fashioned oats
  • 2 tablespoons chopped pecans
  • 2 tablespoons dried cranberries
  • 1/3 cup milk
  • 1/2 cup Daisy Cottage Cheese
  • 3 tablespoons maple syrup

  • 3 tablespoons maple syrup

Directions

  1. Heat the oven to 400 degrees. Line a small rimmed baking sheet with foil and coat with nonstick spray.
  2. Combine sugar and 1/4 teaspoon of the pie spice in a small cup. Sprinkle over the cut-sides of the pears. Place pears, cut-side down, on the baking sheet and drizzle with apple juice. Bake for 15 to 25 minutes or until the pears are tender.
  3. Meanwhile, combine the oats, pecans, cranberries, milk and remaining 1/4 teaspoon pie spice in a microwave-safe medium bowl. Microwave on high for 30 seconds or until hot. Turn the pears cut-side up and top with the oatmeal mixture. Bake for 5 minutes or until hot.
  4. Serve topped with the cottage cheese and a drizzle with maple syrup.
