Combine the crumbs and melted butter in a small bowl until moistened. Press into the bottom of a 9-inch spring-form pan. Place the orange gelatin in a small bowl and stir in the boiling water until dissolved. Cool to room temperature.
Pulse the cottage cheese in a food processor until smooth. Add the cream cheese, 3/4 cup of the sugar, orange and vanilla extracts; process until combined. Place in a large bowl.
Slowly stir in the gelatin mixture. Beat the whipping cream and remaining 1 tablespoon sugar in a food processor until soft peaks form.
Fold into the cream cheese mixture and pour over the crust. Refrigerate for 6 hours or overnight, until set.
