Ingredients

  • 3 cups Daisy Cottage Cheese, drained
  • 1 large egg
  • 1 large egg yolk
  • 1/4 cup , plus 3 tablespoons sugar, divided
  • 3 teaspoons vanilla extract, divided
  • 3/4 teaspoon kosher salt
  • 12 purchased crepes
  • 1 1/2 tablespoons unsalted butter
  • 1 1/2 Granny Smith apples, peeled and sliced
  • 1/4 cup packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup heavy whipping cream
  • 4 teaspoons powdered sugar

  • Cooking Tip:

    To heat individual servings, cover and microwave on high 40 to 60 seconds or until the filling is hot and set. Blueberry, cherry or strawberry pie filling may be used in place of apple mixture.

Directions

  1. Combine drained cottage cheese, egg, egg yolk, 3 tablespoons sugar, 1 ½ teaspoon vanilla extract, and kosher salt in a large bowl. Mix well.
  2. Coat a sheet pan with nonstick spray. Arrange the crepes, browned-side down, on a work surface.
  3. Place 1/3 cup cheese filling on bottom-third of each crepe. Fold the sides in and roll up to seal; place seam-side down on the sheet pan. Cover with foil and refrigerate.
  4. Meanwhile, melt 1 1/2 tablespoons butter in a medium sauté pan over medium heat. Add the apples, sauté 8 minutes or until the apples are tender. Add the brown sugar, cinnamon, and nutmeg. Cook for 2 to 3 minutes or until the sugar is melted and syrupy. Cover and refrigerate until ready to serve. Serve warm.
  5. Bring the cream and 1/4 cup sugar to a simmer in a large saucepan over medium heat, stirring until the sugar is dissolved. Remove from heat. Stir in 1 1/2 teaspoons vanilla extract. Serve warm.
  6. Heat the oven to 375 degrees. Bake the blintzes for 5 to 10 minutes or until lightly puffed and hot.
  7. Arrange the blintzes on a serving plates and top with the apples, and sprinkle with powdered sugar. Serve with the vanilla cream on the side.
