Ingredients

  • 4 medium apples
  • 3 tablespoons packed brown sugar
  • 2 tablespoons raisins
  • 2 tablespoons chopped walnuts
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter, chilled and cubed
  • 1/2 cup Daisy Cottage Cheese

Ingredients

  • 1 tablespoon unsalted butter, chilled and cubed
  • 1/2 cup Daisy Cottage Cheese

Directions

  1. Heat the oven to 375 degrees.
  2. Core the apples to within 1/2-inch of the bottom. Cut off the top 1-inch of each apple, cutting at an angle towards the center to create a slight crater for the filling. Place the apples in an 8-inch square baking pan.
  3. Finely chop 1/3 cup of the apple tops. Toss with the brown sugar, raisins, walnuts, and cinnamon in a small bowl. Spoon the apple mixture into the center of the apples and dot with the butter.
  4. Add 1/4-inch water to the bottom of the baking pan. Bake for 40 to 50 minutes or until the apples are tender when pierced with the tip of a small knife, basting occasionally with the liquid in the bottom of the pan.
  5. Serve warm topped with the cottage cheese. Sprinkle with additional cinnamon, if desired.
