Directions

  1. Heat the oven to 400 degrees. Line 12 muffin cups with paper liners; lightly coat with cooking spray.
  2. Whisk the flour, baking powder, salt and allspice in medium bowl; stir in the cheddar cheese, spinach, bell pepper and green onions to coat.
  3. Whisk the cottage cheese, olive oil, milk, eggs and lemon zest in small bowl until blended. Stir the cottage cheese mixture into the flour mixture just until combined.
  4. Spoon into the muffin cups. Bake for 20 to 25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  5. Cool on a wire rack for 5 minutes; remove from the pan.
