Ingredients
- 8 large eggs
- 1 1/2 cups frozen diced potatoes O'Brien
- 1 cup Daisy Cottage Cheese
- 1 cup fresh spinach
- 6 slices slices cooked bacon, chopped
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup shredded sharp cheddar cheese

Directions
- Heat the oven to 350 degrees. Coat a 6-cup casserole dish with cooking spray.
- Whisk the eggs in a large bowl until blended; stir in all of the remaining ingredients, except the cheddar cheese.
- Pour the mixture into the dish and top with the cheddar cheese.
- Bake for 45 to 50 minutes or until puffed and a knife inserted in the center comes out clean.
