Heat the oven to 375 degrees. Coat 12 muffin cups with cooking spray. Cook the quinoa according to the package directions.
Place in a large bowl; cool slightly. Stir in all of the remaining ingredients, except the cheddar cheese. Spoon the filling into the muffin cups and then sprinkle with the cheddar cheese.
Bake for 20 minutes or until lightly brown around the edges and a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes.
Remove from the muffin cups, running small knife around edge if necessary. Serve warm or at room temperature.
