3 tablespoons frozen orange juice concentrate, thawed
1 teaspoon vanilla extract
1 teaspoon grated orange peel
6 cups angel food cake cubes
2 cups frozen fat-free whipped topping, thawed
3 cups sliced fresh strawberries
1 cup fresh raspberries
1 cup fresh blueberries
1/4 cup sliced toasted almonds
Directions
Place the cottage cheese, milk, orange juice concentrate, vanilla, and orange peel in the bowl of a food processor.
Process the mixture until thoroughly blended. In a 3-quart trifle bowl or other glass bowl, layer half of the cake pieces, cottage cheese mixture, whipped topping, strawberries, raspberries and blueberries, and then repeat the layers.
Sprinkle the top with almonds.
Refrigerate the trifle for at least 2 hours or until firm. Cover and refrigerate any remaining trifle after serving.
