  • 1 medium cucumber
  • 1 clove minced garlic
  • 1 1/2 medium onions
  • 1/4 teaspoon salt

  • 1/2 cup olive oil
  • 1/2 teaspoon oregano
  • 1/2 cup cooked rice
  • 1 pinch salt & pepper
  • 6 6-inch pockets pita bread

Directions

  1. Mix together the sour cream and yogurt. Combine the diced cucumber, garlic, and 1/2 diced onion in a separate bowl. Add the cucumber mixture to the sour cream mixture, sprinkle with ¼ teaspoon salt, and refrigerate.
  2. Cut the bell peppers and 1 onion into 1 inch pieces and place in a bowl. Mix the olive oil and oregano together. Season the mixture with salt and pepper, to taste. Mix the vegetables with the oil.
  3. Grill the vegetables on wooden skewers over a medium grill for 10 minutes or under the broiler for 3 minutes.
  4. Combine the vegetables, cooked rice, and cucumber sauce. Serve in pita bread.
