Ingredients

  • 2/3 cup Daisy Cottage Cheese
  • 2 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1 tablespoon sugar
  • 6 tablespoons water
  • 1 cup oat flour
  • ½ teaspoon baking powder

Directions

  1. Heat waffle iron on medium setting.
  2. Add cottage cheese, egg yolks, vanilla, sugar, water, oat flour, and baking powder to a blender. Blend until batter is smooth. Pour into bowl. Reserve.
  3. Separately, beat egg whites to soft peaks. Gently fold into batter until evenly combined with no streaks remain.
  4. Coat waffle iron with non-stick spray. Pour a little less than ½ cup batter into iron and cook until golden brown. Serve immediately.
