  1. Add cottage cheese, peanut butter, and honey to a food processor and blend until completely smooth. Do not freeze.
  2. Lay 3 graham cracker sheets on the bottom of a cookie sheet tray side by side to make one large, seamless rectangle without gaps.
  3. Spread the cottage cheese ice cream mixture evenly on top. Gently top with remaining sheets.
  4. Immediately place the sandwiches in the freezer and freeze for one to 2 hours.
  5. Remove from freezer. Let set for 5 minutes and slice with a knife into individual sandwiches before serving.
