  • 8 3-ounce filet mignon
  • 1 tablespoon olive oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon cracked black pepper
  • 3/4 cup Daisy Cottage Cheese
  • 2 ounces Gorgonzola cheese
  • 1 teaspoon chopped fresh thyme
  • 1 tablespoon white balsamic vinegar


Heat the grill or grill pan to medium high. Season the meat with the oil, salt and pepper. Depending on the thickness of the filet, cook the steaks for 5-6 minutes per side for medium-rare to medium (may cook longer to desired doneness). While the steaks are cooking, combine the cottage cheese, Gorgonzola, thyme and vinegar in a food processor. Puree the sauce to a creamy texture. Serve sauce slightly warmed (in a saucepan) or cold over the steak.
