Avocado White Bean Dip

Serves: 8 (4 tablespoons per serving)

Ingredients

  • 15 ounce can cannellini beans, rinsed and drained
  • 1/2 cup Daisy Cottage Cheese
  • 1 large avocado, coarsely chopped
  • 1/4 cup coarsely chopped fresh cilantro
  • 1/4 cup coarsely chopped flat-leaf parsley
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon olive oil
  • 1 large garlic clove, minced
  • 1/2 teaspoon salt

Directions

Combine all of the ingredients in a food processor and pulse until smooth. Serve with fresh vegetables and crackers.
