Brown the sausage in a large skillet over medium-high heat, stirring frequently. Stir in the pasta and add the broth to cover the pasta. Bring to a boil over high heat and boil for 5 minutes, stirring frequently. Stir in the bell peppers. Continue cooking and stirring an additional 5 minutes or until the broth is absorbed. Stir in the pasta sauce and bring to a boil. Gently stir in the mozzarella and olives. Spoon the cottage cheese randomly over the top of the pasta and sprinkle with the Parmesan cheese. Cover and simmer at medium-low to low heat for 8 to 10 minutes or until the cheese is melted and hot.
