Hearty Baked Omelette

  • 8 large eggs
  • 1 1/2 cups frozen diced potatoes O'Brien
  • 1 cup Daisy Cottage Cheese
  • 1 cup chopped fresh spinach
  • 6 slices cooked bacon, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup shredded sharp Cheddar cheese


Heat the oven to 350 degrees. Coat a 6-cup casserole dish with cooking spray. Whisk the eggs in a large bowl until blended; stir in all of the remaining ingredients, except the cheddar cheese. Pour the mixture into the dish and top with the cheddar cheese. Bake for 45 to 50 minutes or until puffed and a knife inserted in the center comes out clean.
