Light Banana Bread

  • 1/2 cup Daisy Cottage Cheese
  • 2 mashed ripe bananas
  • 1/2 cup egg substitute
  • 3/4 cup granulated sugar
  • 1/3 cup skim milk
  • 2 teaspoons vanilla extract
  • 3/4 cup whole wheat flour
  • 1 1/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt


Preheat the oven to 325 degrees. Lightly grease a 9x5-inch loaf pan with cooking spray. Puree the cottage cheese in a mini food processor. In a medium size bowl, add the pureed cottage cheese, mashed bananas, egg substitute, sugar, milk, and vanilla extract. Beat with hand mixer until well combined. In a separate large bowl, whisk together the whole wheat flour, all purpose flour, baking soda, baking powder, and salt. With a mixing spoon, stir the wet ingredients into the dry ingredients until just moistened (over mixing will cause bread to become tough). Pour the batter into the prepared baking pan and cook for 40 minutes or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 5 minutes, and then turn onto a wire rack to continue the cooling process.
