In a medium bowl, stir together the cottage cheese, cilantro, mint, lemon juice, cumin, paprika and cayenne pepper. Stir in the cucumber, tomatoes, and red onion. To serve, line the plates with the lettuce leaves. Spoon the cottage cheese salad onto the lettuce.
