Spray a large non-stick skillet and heat to medium heat. In a large mixing bowl prepare the pancake mix according to the package directions. To the prepared pancake batter, add 1 cup banana slices, 1 cup blueberries, and ½ cup cottage cheese. Place about ¼ cup of the pancake batter on the skillet. Cook on the first side until the mixture bubbles (about 2 to 3 minutes). Turn the pancake over. Continue cooking an additional 1 to 2 minutes, or until the pancake is lightly browned. Remove from the heat and set aside; keep warm. Repeat with the remaining pancake batter. For each serving, top 2 or 3 pancakes with ¼ cup cottage cheese, 2 tablespoons banana slices, and 2 tablespoons blueberries. Serve with blueberry syrup, if desired.
