Cottage Cheese and Pear Crostini

  • 1 ripe firm pear
  • 1 French baguette
  • 1/4 cup crumbled blue cheese
  • 1/2 cup Daisy Cottage Cheese
  • 1/2 teaspoon finely chopped crystallized ginger
  • 1 1/2 tablespoons fresh basil, cut into strips


Core and slice the pear into 10 thin slices. Heat the oven to 400 degrees. Lay the baguette slices on cookie sheet. Lightly spray the tops with cooking spray. Bake baguette slices for 10 minutes or until slightly crisp. Remove from oven and leave on the cookie sheet. Top each baguette slice with 1/2 teaspoon of blue cheese and a pear slice. Return to the oven for an additional 3 minutes or until cheese is melted and warm. Remove from the oven and place on a serving platter. In a small bowl, mix the cottage cheese and the ginger. Spoon a scant 1/2 tablespoon of the cottage cheese mixture over the pear slices. Top each with a few basil strips.
