Santa Fe Dip

Serves: 7 (4 tablespoons per serving)

Ingredients

  • 3/4 cup Daisy Cottage Cheese
  • 1 avocado
  • 1/3 cup frozen corn, thawed
  • 1/3 cup canned black beans, drained and rinsed
  • 1 plum tomatoes, finely chopped
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon Mexican seasoning
  • 1/4 teaspoon salt

Directions

Pulse the cottage cheese and avocado in a food processor until blended, but still slightly chunky. Stir in all remaining ingredients. Garnish with additional corn, tomato, beans and cilantro. Serve with your favorite dippers.
