Easy Tzatziki - place peeled and shredded cucumber in double-layered paper towels. Squeeze out as much water as possible. Mix with Daisy Ranch, olive oil, salt, pepper, garlic, lemon juice and fresh dill in a small bowl. Cover and refrigerate dip until ready to use. Dip may be refrigerated for 3-4 days.
Assemble: arrange rice, tomatoes, diced cucumbers, onion, pita, olives and chicken in a bowl or plate. Sprinkle with feta. Serve with pita slices and ¼ cup of tzatziki.
