Ingredients

  • 1 apple
  • 1 teaspoon cinnamon
  • 2 teaspoons artificial sweetener
  • 1 teaspoon vegetable oil
  • 2 tablespoons lite maple syrup
  • 6 3 1/2" diameter frozen whole wheat pancakes
  • 1 cup Daisy Brand Cottage Cheese

Directions

Directions Peel, core, and cube the apple. Combine apples, cinnamon, and artificial sweetener in a bowl. In a small pan heat the oil. Pour in the apple mixture and sauté for 2 minutes. Add 2 tablespoons of lite maple syrup to the mixture and cook an additional minute. Fold the mixture into the cottage cheese until just mixed. Heat the pancakes per the package instructions. Place one pancake on a plate and top with 1/6 of cottage cheese mixture. Repeat to form three layers on each plate. Top with a sprig of fresh mint and a drizzle of maple syrup, if desired.
