Ingredients

  • 4 1/4 cups prepared cooked potatoes, sliced or diced
  • 1 chopped yellow onion
  • 1/2 teaspoon black & red pepper blend
  • 3 cups Daisy Brand Cottage Cheese
  • 1 cup Daisy Brand Sour Cream
  • 3 1/2 ounces shredded reduced fat Cheddar cheese
  • 1 dash paprika

Directions

Preheat the oven to 350 degrees. Butter a 9x13" casserole dish. In a medium bowl, mix the potatoes with the chopped onions and the black & red pepper blend. Fold in the cottage cheese and sour cream. Spoon the potato mixture into the casserole dish. Top with the shredded Cheddar cheese and paprika. Bake at 350 degrees for 30-40 minutes.
