Ingredients

  • 1 tablespoon olive oil
  • 2 cups sliced onions
  • 2 cups sliced zucchini
  • 1 cup roasted red peppers, seeded and thinly sliced
  • 2 tablespoons sliced black olives
  • 2 tablespoons sliced green olives
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 6 8-inch whole wheat tortillas
  • 1 1/2 cups shredded Mexican cheese blend
  • 1/3 cup chopped fresh cilantro leaves
  • 1/3 cup Daisy Light Sour Cream
  • 3 tablespoons Salsa Verde

Directions

Heat the olive oil in 10-inch non-stick skillet, over medium heat. Add the onions; cook, stirring occasionally, until softened (5 to 6 minutes). Add the zucchini; continue cooking, stirring occasionally, until zucchini softens (4 to 5 minutes). Add the red peppers, olives, teaspoon salt, and pepper. Cook until heated through (2 to 3 minutes); remove from skillet to a large bowl and cover to keep warm. Wipe out the skillet. Place two tortillas in the skillet. On top of half of each tortilla, add ½ cup vegetable filling, ¼ cup shredded cheese, and 1 tablespoon cilantro leaves; fold each tortilla in half. Cook the tortillas over medium high heat until first side is lightly browned (2 to 3 minutes). Flip the tortillas over and continue cooking until second side is lightly browned (2 to 3 minutes). Repeat with the remaining tortillas. Mix the sour cream and salsa verde. Serve each tortilla with 1 tablespoon of the sour cream sauce. Refrigerate leftovers.

My boys and I really love this recipe. It takes almost no time to make and you really can make it with ANY vegetables you have on hand (or none, for that picky eater of yours). The squeezable Dasiy sour cream is fun to squirt on top, and it saves dirtying a spoon and bowl for dipping! I like to put pepper jack cheese in mine to spice it up a bit!
