1/2 English cucumber, cut in cubes

2 medium chopped tomatoes

1/2 cup black olives

1/4 cup bite sized red bell pepper strips

2 tablespoons diced red onion

4 cups Romaine lettuce

1/2 cup Greek vinaigrette salad dressing

2 cups Daisy Brand 2% Cottage Cheese
Directions
In large bowl, combine cucumber, tomatoes, olives, bell pepper, red onion, and romaine. Add vinaigrette; toss. Divide evenly on 4 salad plates. Top with cottage cheese. Serve with pita chips, if desired.
