Ingredients

  • 1/4 cup melted butter
  • 1/4 cup firmly packed light brown sugar
  • 4 teaspoons freshly grated lemon zest
  • 1/2 cup flour
  • 1/2 cup old fashioned oats
  • 1/4 cup finely chopped toasted walnuts
  • 1/2 teaspoon baking powder
  • 1 14 ounce can sweetened condensed milk
  • 1 cup Daisy Brand 4% Cottage Cheese
  • 1 egg
  • 2 tablespoons fresh lemon juice
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup dried cherries

Directions

Heat the oven to 350 F. In medium bowl stir together butter, brown sugar, 2 teaspoons lemon zest, flour, oats, walnuts, and baking powder; mix well. Firmly pack crust mixture into bottom of greased 9-inch baking pan. In medium size mixing bowl add sweetened condensed milk, cottage cheese, egg, lemon juice, and 2 teaspoons lemon zest. Beat at medium speed 1 minute. Increase speed to high; continue beating 1 more minute. Add chocolate chips and stir. Pour filling over crust. Sprinkle filling with cherries. Bake for 30 to 35 minutes or until filling is very lightly brown. Remove from oven. Cool completely. Refrigerate 3 hours. Before serving the bars, sprinkle top with powdered sugar, if desired and cut into squares. Refrigerate leftovers.
