4 large egg whites

2 tablespoons hummus

1/2 cup Daisy Brand 4% Cottage Cheese

2 tablespoons sliced green onions

2 tablespoons chopped Roma tomatoes
Directions
Heat a non-stick sauté pan over medium high heat. Spray sauté pan with vegetable spray (off heat). Pour 2 egg whites into the pan, stirring continuously to prepare omelet. Slide the omelet onto a plate. Spread half of the omelet with 1 tablespoon hummus. Dollop 1/4 cup of the cottage cheese over the hummus. Sprinkle with 1 tablespoon of sliced green onions and 1 tablespoon of tomatoes onto cottage cheese. Fold over the other half of the omelet. Repeat with second serving. *Optional - serve with a side salad for a complete meal.
