Ingredients

  • 2 cups chopped fresh mushrooms
  • 2 tablespoons vegetable oil
  • 3 cups chopped fresh spinach
  • 1/2 teaspoon minced shallots
  • 2 tablespoons minced fresh thyme
  • 2 teaspoons kosher salt plus extra for sprinkling
  • 1/4 cup bacon crumbles
  • 1 cup blue cheese
  • 1 cup Daisy Brand 4% Cottage Cheese , drained
  • 1 cup bread crumbs
  • 12 split chicken breasts bone in with skin
  • 2 tablespoons olive oil
  • 2 teaspoons black pepper

Directions

Preheat the oven to 325 degrees. Sauté the chopped mushrooms in the vegetable oil. Drain the mushroom liquid, return to heat and add the spinach, minced shallots and thyme leaves. Sauté the vegetables for an additional 3 minutes. Add 2 teaspoons of kosher salt, cooked crumbled bacon, blue cheese, drained cottage cheese and bread crumbs to the vegetable mixture. Stir to mix thoroughly. Loosen the chicken skin from the breast meat but do not remove. Stuff the spinach cheese mixture between skin and breast meat for each. Rub skin with olive oil and sprinkle with additional kosher salt and the ground black pepper. Bake the chicken on a baking rack at 325 degrees for approximately 1 hour or until internal temperature reaches 160 degrees.
