Ingredients

6 boneless skinless chicken breasts

1 cup Daisy Brand Sour Cream

1/4 cup shredded Cheddar cheese

1 chopped shallot

1/8 cup chopped parsley

1/8 cup chopped chives

1/4 cup slivered almonds

2 teaspoons salt

2 teaspoons pepper

1/4 cup grated Parmesan cheese

6 tablespoons butter

1 cup flour

6 beaten eggs
-
1 1/2 cup seasoned bread crumbs
Directions
Pound chicken breast between waxed paper to 1/3-inch thickness, set aside. Mix sour cream, shredded cheddar cheese, shallot, parsley, chives, almonds, salt, pepper and Parmesan cheese together. Place a spoonful of the mixture on each chicken breast with a tablespoon of butter. Roll up and roll in flour. Dip in beaten eggs, and then roll in breadcrumbs. Spray casserole dish with non-stick spray. Place chicken in dish and spray top with non-stick spray. Bake at 350 degrees for 30-45 minutes, covering if chicken begins to over brown.
