Serves: 10 (3/4 cup per serving)

Ingredients

  • 5 cups frozen shredded hashbrowns, thawed
  • 3 cups chopped cooked ham
  • 1 chopped green bell pepper
  • 3 cups shredded Mexican cheese blend
  • 5 eggs
  • 1 1/4 cups Daisy Sour Cream
  • 1 cup milk
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 3/4 cup Pico de Gallo

Directions

Heat the oven to 350 degrees. Grease a 13x9-inch baking dish or spray with cooking spray. Mix the hashbrowns with the ham, bell pepper, and 2 cups cheese in a medium bowl. In another medium bowl, whisk together the eggs, 1 cup of sour cream, milk, oregano, salt, chili powder, and onion powder. Combine the hashbrown mixture with the egg mixture; pour into the baking dish. Bake for 35 minutes; remove the casserole from the oven and sprinkle with the remaining cheese. Return the casserole to the oven and bake for 15 to 20 minutes or until the hashbrowns are tender and knife inserted in the center comes out clean. Top each slice of casserole with servings with Pico de Gallo and a dollop of sour cream.

I received a free coupon from #Influenster and #Daisysourcream in exchange for my honest review. I decided to try out a receipt for a hash brown casserole. I was impressed that adding sour cream added so much flavor and made it something everyone in my home enjoyed! I will be remaking it for Christmas morning! We have decided to try adding this to other family faves and so far haven't been disappointed. Thank you for allowing me to broaden my horizons!! :)

I love breakfast casseroles, and this is a great one! In response to the reviewer who thought 185 g. carbs are way too much, that is the number of grams for the entire casserole, NOT per serving ( and remember this serves about 10 people!).

I got this recipe from my sister, she brought it to a 4th of July celebration. It was so good that I got the recipe and have made it several times.

Love this- bring it to all my work functions and it's always a hit. I make it the night before and put in a crock pot overnight for 8 hours. Always turns out perfect.

185 carbs? I'm a diabetic and that is three days worth of carbs for me. This sounds really good, but with sodium levels so high and that many carbs, if they are accurate, this is something no one should be eating.

This recipe is a winner. I have made it several times for breakfast meetings. It is very versatile you can substitute your choice of meat or vegetable. Delicious

This is the BEST recipe ever! I make it for all my parties that happen around breakfast and everyone raves about it! You do have to cook for a bit longer I find so that it is not too runny.

Sooo good! I found this recipe on another website about a year ago and made it for a family event(two chefs in the family) HUGE hit. I have been looking for it forever and finally just found it here! Easy and cran be prepped the night before. Topping it with the sour cream and pico is a MUST. This is a huge hit, even with my kids :) thank you

I made this for the first time for Easter Brunch and it was a huge success. I loved that there were only 2 ingredients to chop and all other ingredients were from packaged items. The only suggestion is to use a LARGE bowl for the hashbrowns, ham, bell peppers and cheese as I changed bowls twice to get the size needed to properly mix the ingredients. Because of time constraints after Easter Church Services, I baked it the night before for 35 minutes, refrigerated over night and then let sit at room temperature while at church and then finished baking for the 20 minutes. It was great! Everyone wants the recipe.
