Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1/2 cup Daisy Sour Cream
  • 1/2 cup canola oil
  • 1 1/2 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • 3/4 cup semi-sweet chocolate chips

Directions

  1. Heat the oven to 350 degrees. Coat a 9x5-inch loaf pan with cooking spray.
  2. Whisk the flour, cocoa, cinnamon, baking soda, and baking powder in medium bowl.
  3. Beat the sugar and eggs in a large bowl at medium speed for 1 minute. Beat in the sour cream, oil, and vanilla until blended.
  4. At low speed, beat in the flour mixture just until combined. Stir in the zucchini and chocolate chips, spoon into the loaf pan.
  5. Bake for 1 hour 15 minutes or until a wooden skewer inserted in the center comes out clean.
  6. Cool in the pan on a wire rack for 10 minutes; remove from the pan. Cool completely.
