Ingredients

  • 2 pounds Russet potatoes
  • 4 strips bacon, chopped
  • 1 shallot, finely chopped
  • 2/3 cup Daisy Sour Cream
  • 1/2 cup hot milk
  • 1/2 cup crumbled blue cheese

Directions

  1. Peel and cube the potatoes. Place the potatoes in a 3-quart saucepan; cover with water by 1 inch. Bring the potatoes to a boil and reduce the heat. Simmer the potatoes for 20 minutes or until fork tender. Drain and keep warm.
  2. Meanwhile, in an 8-inch skillet, cook the bacon over medium-high heat for 8 minutes or until crisp, stirring frequently. Remove and discard all but 1 tablespoon of the drippings.
  3. Stir in the shallot. Cook for 2 to 3 minutes or until tender. Set aside.
  4. Mash the potatoes with hand masher or electric mixer.
  5. Stir in the sour cream and milk; beat with a spoon until smooth.
  6. Stir in the bacon/shallot mixture and blue cheese. Serve immediately.
